Ingredients

  • Cooking Oil – 1 tsp
  • Garlic cloves – 2 (grated)
  • Onions – 2 (chopped)
  • Leek – 1 (chopped)
  • Carrots – 2 (medium sized, chopped)
  • Tomato puree – 1 tbsp
  • Fresh tomatoes – 2 (chopped)
  • Butter Beans – half a can
  • Salt – to taste
  • Rosemary herb – a pinch
  • Butter cheese – for garnish
  • Celery – for garnish
  • Vegetable Stock – 1-2 cups

Instructions

  1. In a cooking pan, heat the oil. Sprinkle the rosemary to add a quick flavour of this winter

  3. Add the onions and garlic and sauté them on medium heat so that they get a bit
  4. roasted and give a slightly tarred taste to the soup. You should adjust the flame
  5. intermittently so as not to burn the vegetables, but to cook them up sufficiently too. Add
  6. the leeks and carrots and let them cook and blend well. Keep stirring.
  7. Now, you should put the tomato puree and sauté again till the mixture becomes
  8. brownish. Next, add the tomatoes and the butter beans. Let the beans absorb the
  9. puree.
  10. Add salt to taste. Now pour in the vegetable stock, according to the quantity you want
  11. to serve. Bring it to a boil. The vegetables must have blended well by now and the
  12. tomatoes will add a tangy taste. The best part of this soup is that you can use frozen
  13. vegetable stock too, if you are short of time. You can also use certain other vegetables
  14. of your choice or as per the season allows.
  15. Take some fresh celery, chop it and add for garnishing after switching off the heat. Top
  16. it off with some salted butter cheese. This will make the soup all the more tempting and
  17. will also give it a creamy feel.
